Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup vegan butter
  • ¼ cup powdered sugar
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 2 tablespoons lemon zest
  • ½ cup freshly squeezed lemon juice
  • ¼ teaspoon salt
  • ¼ cup vegan butter, melted

Instructions

  1. Preheat oven to 350°F.
  2. In a medium bowl, whisk together the flour, vegan butter, and powdered sugar until it forms a dough.
  3. Press the dough into an 8x8 inch baking pan. Bake for 15 minutes.
  4. In a small saucepan, whisk together the granulated sugar, cornstarch, lemon zest, lemon juice and salt. Place the pan over medium heat and cook, stirring constantly, until thickened, about 5 minutes.
  5. Pour the lemon mixture over the baked crust and spread evenly.
  6. Bake for an additional 20 minutes, or until the top is lightly browned.
  7. Allow to cool completely before cutting into bars.
