Vegan Lemon Bars Recipe

Ingredients
- 1 ½ cups all-purpose flour
- ½ cup vegan butter
- ¼ cup powdered sugar
- 1 cup granulated sugar
- 2 tablespoons cornstarch
- 2 tablespoons lemon zest
- ½ cup freshly squeezed lemon juice
- ¼ teaspoon salt
- ¼ cup vegan butter, melted
Instructions
- Preheat oven to 350°F.
- In a medium bowl, whisk together the flour, vegan butter, and powdered sugar until it forms a dough.
- Press the dough into an 8x8 inch baking pan. Bake for 15 minutes.
- In a small saucepan, whisk together the granulated sugar, cornstarch, lemon zest, lemon juice and salt. Place the pan over medium heat and cook, stirring constantly, until thickened, about 5 minutes.
- Pour the lemon mixture over the baked crust and spread evenly.
- Bake for an additional 20 minutes, or until the top is lightly browned.
- Allow to cool completely before cutting into bars.
